Our Journey to Craft Sodas

Back in 2018, we (Oli & Ash) set out to create an all-natural, fiery, alcoholic ginger beer. It didn’t go to plan (sorry to those who tasted it!), but it sparked a passion for experimenting with drinks—everything from beer and cider to kombucha, kefir, and infusions.

Sodas quickly became our standout success, loved by our taste testers for their versatility—great on their own, with a splash of something stronger, or even in cocktails. We dove into research, perfected our recipes, and set up a small production space in Essex. Just as we were ready to launch in 2020… COVID hit.

With production on hold, we focused on sourcing the best real ingredients—no flavourings—because quality ingredients make our drinks big on flavour. Having met our local farmers and discovered the incredible natural variety in apples we had a covid pivot and launched our small-batch apple juices. By the end of the 2020 season, we had pressed over 30 apple varieties and learned more about apples than we ever imagined!

Once apple season wrapped up, we returned to our soda dreams. Our first creation? Twisted Limeade—a bold mix of juicy limes, organic cardamom, and Essex sea salt. It’s a flavour that sparks debate, but that’s exactly what we love—crafting unique, thoughtful sodas. From there we've grown the range to five core sodas with a few seasonals thought the year. With so many ideas brewing, we can’t wait to share what’s next!!!
