Taste & Texture

Irish Moss has a neutral taste, as it is air dried and sun bleached, with a mild sweet scent.

How to Use:
• To Make Jelly: Boil a handful of Irish Moss in 1 litre of water for 20-30 minutes. Once dissolved, strain and scrape the gelatinous parts through a sieve. Let it cool for a thick jelly.
• For Tea: Follow the jelly instructions, adding a tea bag of your choice. Enhance the flavour with cloves, cinnamon, star anise, and honey to help with a chesty cough.
• In Soups & Sauces: Add a handful to your soups, stews, or sauces for a natural thickening agent.

The Cornish Seaweed Company

We have been harvesting seaweed since 2012, born out of a love for life, a passion for the ocean, and a firm belief in healthy and tasty food.

Our aim is to provide you with an honest superfood; sustainably harvested, local, edible seaweeds and to introduce these as an alternative food source that is healthy, nutritional, tasty and good for the environment. Did you know that seaweed does not need pesticides, fresh water, or fertiliser to grow? Or, that they are the most productive organisms in the world?

With the clean and wild Cornish coast as our playground, we scour its rocky shores in search for the highest quality sea veggies. All our seaweed is harvested, washed, dried and packaged by hand.

It is important to acknowledge the importance of seaweeds for marine life and we need to balance this with its use by humans. Our harvest methods reflect this: We give out seaweeds a haircut instead of taking it all. This allows each plant to grow back and causes minimum disruption to the ecosystem. We can come back for more, again and again!

Our dedication to the environment was recognised when we received the Cornish Sustainability Awards for best contribution to a sustainable food economy.

In 2016 we started thinking about growing seaweed. We set up the first English seaweed farm in 2017 to expand our offer and improve our sustainability. Together with the University of Exeter and the Marine Biological Association we conduct various research on our farm.

We now know that our seaweed farm is the equivalent of an artificial reef, providing habitat, shelter and food for many different sea creatures, including commercial fish! We really hope and believe that seaweed becomes part of everyone’s diet and that we come to recognize it for what it is. A nutritional and environmental superfood!
